Nopales Tacos

As soon as I saw the Nopal I knew I had to prepare something fun! I have never eaten Nopales (I use to be very picky) so this would definitely be something new & exciting!

I decided on tacos, it would be simple and easy! Of course I used my husband as the taste tester, he was actually licking his fingers after he ate it, it was so good! I need more Nopales!

Right after we devoured our one Nopal Taco I say to my husband "I bet this is your first cactus taco" haha...Yes it was! and mine too...

Ingredients: 

1 large Nopal (from my Ooooby box, product from Food Commons Fresno farm) BTW Food Commons Fresno THANK YOU for trimming and cleaning the Nopal!!
1/2 tsp salt
1 tsp Olive Oil
1/2 tomatoe (Ooooby box, product from Ferrer Farm in Madera)

Directions:

Preaheat oven to 425 degrees

Sprinkle salt on each side and rub Olive oil (generously) on each side, cut in half
Place on baking pan and put in oven for 15-25 minutes, remove from oven
Add diced tomatoes on each piecce
